About Marc
I am delighted to invite you to join me on this culinary adventure. I am an organic farmer, and massage therapist. My wife and I run an animal sanctuary for rehomed and rescued animals. For 8 years, we ran our own health retreat which included wellness packages, food coaching, massage, food workshops and all meals.
My journey through health challenges has been a roller coaster of misdiagnoses, mistreatment, and frustration. For years, I found myself navigating a maze of doctors, tests, and prescription medications, all without finding lasting relief.
Around 12 years ago, I reached a turning point when I was placed on a restrictive elimination diet, limited to only white foods like leeks, white fish, potatoes, and peeled ripe pears. Despite the monotony and discouragement of this diet, it sparked a newfound curiosity within me to experiment with creative recipes within its limitations.
Unsurprisingly, this diet failed to provide the healing I sought. It was then that I made the life-changing decision to transition to a raw, organic, plant-based diet. This pivotal choice marked the beginning of reclaiming control over my health and my life. With each plant-based meal, my health began to improve dramatically, fueling my passion to empower others on their own wellness journeys through dietary changes.
Today, I am dedicated to sharing the knowledge and experiences gained from my own healing journey. By incorporating the wisdom, common sense, and nutritional advice of Barbara O’Neill, I aim to inspire others to bring wholesome, delicious food into their lives and onto their tables. I’ve successfully finished Barbara’s health coaching program and enjoyed a two-week stay at her Misty Mountains Lifestyle Retreat. During my time there, I spent one week as a guest and the other volunteering. I led daily workshops for both guests and staff, contributing to the health and wellness the retreat.
I am a passionate plant-based chef, recipe developer, and workshop host with over a decade of experience. Throughout the years, I’ve had the privilege of hosting numerous plant-based workshops, honing my skills, and spreading the joy of delicious, healthy cooking.

- An ingredient list and a recipe booklet will be emailed to you before the workshop begins.
- A good blender with a tamper (I use a Vitamix)
- A food processor (I use a Magimix)
